I woke up... grabbed a banana to go... went to the gym to get my strength and cardio work out in... came home showered checked my computer (sound familiar?)... and got ready to head out to a Doctor's apt.
Ofcourse... I got to the office at my scheduled appt time but didn't actually get in to my room for about 15 minutes... funny how that works? Might as well just come 15 minutes late right?
And the first thing the Doc says.... looks like you are due for some shots, so we will do those today as well!
HOW LOVELY!
So I get all the fun appt stuff out of the way... and the Doc leaves my room... so I sit waiting for the nurse to come give me my overdue shot...
and I wait...
and I wait...
so not only am I dreading this shot... but my anticipation is killing me as I wait for the nurse...
finally I decided they forgot about me, so I peaked my head out of the door and asked another nurse if any one was coming in. They did forget about me... but no worries the nurse made up the lost time... She came in rubbed down my arm and before I knew it she was pushing that needle in. Alrightttyyyyyy then! Nothing like speeding up the process!
Doctors visit complete.... See you all in a year!
In the afternoon, I headed down to Irvine for the Ernst and Young sophomore leadership program. It was great to see the professionals that I had met throughout the semester, and if I wasn't already excited about starting my internship next week.... I am even more STOKED!!!
I got to met my team for the client I am working with... which is awesome! And I got to met another intern that I will be spending my summer with! Yipeeee!
Countdown to internships start: T- 7 days!
For dinner I made the stuffed pepper again, but this time added extras.
I used a tuna packet instead of the veggie burger.
And I added 2T cottage cheese to the mix as well.
This may be a new favorite! And the options to switching it up are endlesssss. :)
Sunday I experimented with making my own pizza. And it was yummy!
- 1 whole wheat tortilla
- 2T pasta sauce
- 1 C peppers
- 1/4 onion chopped
- garlic pepper
- nutritional yeast (I am OBSESSED with this stuff!)
Baked at 325 for about 10-12 minutes
