ATTEMPT ONE = MY NEW OBSESSION
Cottage Cheese Pancakes
| Complete with a side of sliced plum! |
- 1/4 cup cottage cheese
- 1/4 cup oatmeal
- 2 egg whites
- splash of vanilla
- dash of stevia
Pour into pan and cook like a normal pancake! Sounds odd, I know, but literally it taste like the real thing only BETTER!
ATTEMPT TWO: SUCCESS TWO
Tuna Burgers

The Easy How To:
You need:
- 1 Packet of Tuna Light
- 1/4 cup cottage cheese
- 1/4 cup onion
- 1/4 cup chopped green pepper
- 2 -3 Tbls salsa
- 1 eggwhite
- 1/4 cup oatmeal
- seasoning (garlic, Cayenne... whatever you think would be yumyum!)
Combine all ingredients together... spoon into pattie like balls in pan... and cook at medium temp until solid. They tend to crumble until they finally stick together soooo patience is the virtue... but they are totally worth it!
ATTEMPT THREE = SATISFIED TUMMY
Pita "Panini"
| Complete with a side of cabbage salad with tomato and raisins. |
Want a warm toasted sandwich without the butter and calories of that oh so tempting paninii! I do!
- Half a whole wheat Pita
- 1/4 cup cottage cheese
- 1/4 avocado
- tomato slices
Put it all into the pita and put on stove flipping it occasionally. The cottage cheese melts and the avocado and tomato get all warm while the pita is nicely toasted! Get out of here paninni! You have been replaced!!
ATTEMPT FOUR = I am CRAVING some more!
Kale Shrimp Salad
Take some Kale.
Add some chopped tomato.
Top with some raw shrimp.
and you have a lunch from the heavens and nutrition from the gods :)
ATTEMPT FIVE = Where have you been all my life?
Soy Tofu Stir fry
This marked two new "firsts"! Bean sprouts and marinated tofu!
The night before I went to the grocery store last minute to get some yogurt... and there were these things called "bean sprouts" on clearance for $.49 so I thought what the heck I will give them a try!
I did a little recipe research and discovered that a stir fry would suit them best so that is exactly what I did!
So that night, I successfully pressed my first tofu! (super easy but hadn't done it in the past) and marinaded my slices of tofu in soy sauce overnight!
The day of this delicious lunch, I took the tofu out (LOADED with Flava!) and cooked the bean sprouts, chopped celery, and sliced carrots on the stove for about 7 minutes. Poured that stir fry into a bowl, and was pleasantly surprised!
I love bean sprouts!
I love tofu!
I love Soy tofu stir fry!
