But I am BACK in action not to worry!
The question truly is though... what the heck have I been doing these last few weeks?!?
Well... School of course. Tutoring of course. Theta of course. Working out of course. Eating of course. Andddd my Dad came to visit!!!
That pretty much sums it up!
School is same old same old.. homework, study, test, homework, study, test, presentation, homework, study, test, group project, homework, study, test.... I think you get the picture. But like we all know, I am a nerd and I love school, so despite my complaining and being tired, I am enjoying it!
Theta is my other half! I am so in love with all my new sisters and old of course! They complete me. <3
Eating... ahhh true love! Similar to working out, my eating schedule has been a little wacky. And to be honest, I am not liking it at all. I have had a lot of conferences and meetings to go to, and then there have been events almost every weekend I have been attending, so I haven't been home to make dinners or lunches, and I end up eating whatever is offered at these events. Long story short, either I eat something I don't like or that is not good for me and feel like crap... or I don't eat at all have no energy and feel like crap. Either way... crap is what I end up feeling like. All I want is a nice huge bowl of veggies on top of spinach.... is that so much to ask for people! Why so much pizza and pasta and pretzels and tacos and cookies and cake and ice cream and...!?!!
Just not a fan.
I usually try my best to pack my lunch box and bring my meals, but just from exhaustion I think I have become a little lazier with it all and then don't have time in the morning to put something together. So with November approaching and the Holiday season almost here especially, my Foodie goal is to pack my lunch box the night before, so I have no excuse the next day! Goal number one.
I have had some time to try new things of course... or I make sure I make the time! So what are my new combinations?!!
MAC and CHEESYYY
(Unfortunately I don't have any pics of this... it was gone to quick)
- Half a spaghetti squash cooked and stringed
- 1/3 block Firm Silken Tofu
- 3 TBLS nutritional yeast
- sprinkle of garlic
- 2 TLBS unflavored unsweetened almond milk
Combine all ingredients except the squash into a magic bullet and blend! It will blend into a liquidy cheesy sauce. Pour on top of your stringed spaghetti squash and there you go! Mac and Cheesssyyy!
It was a bowl of goodness!

Another new addiction and a quick shot of protein! It is called Textured Vegetable Protein. You can buy it in bulk at Smart and Final, but it comes dry.
To cook:
1/2 cup TVP
a little over 1/2 cup water
Microwave for 45 seconds and let sit for a little over 2 minutes.
The texture is similar to ground beef (which I love <3), and then you can add whatever you want to it to. Sometimes I will bring a baggy of it with me to school and make it throughout the day by just adding hot water to it, just to get a little shot of protein to keep my body going. I recommend trying it! My roommates call in my "dog food", but like half the things I eat... don't judge until you try!
Toasted Pita Pocket
Nothing easier then a simple Pita Pocket for a quick lunch.
- Half a pita
- 1/4 cup cottage cheese
- 1/2 of a half of avocado
- 1/4 shredded white chicken breast
- 1/4 cup diced tomatos
Open the pita pocket... smear in the cottage cheese, add the chicken, avocado, and tomato... place on the stove until toasted (flip it to make sure each side gets equal treatment...) and there you go! The cottage cheese melts and the rest is all warm to the tummy! It is a little piece of healthy heaven!
But despite the crazy month, the slight changes in my workout routine, and lack of time to make my meals... my Dad came to visit me last weekend so October has been
MY FAVORITE MONTH thus far...
HANDS DOWN!
And to make it even better, he was there to cheer me on when I ran the Chapman 5K and got 2nd place! Just wouldn't have been the same without him! Best Weekend of the Year all around! Happy Tuesday! Glad to be finally back to my blogging routine! :)
