Happy October 1st!
Can you believe it is already October! What happened to August? And September! Oh my!
But nonetheless it is October... so what does that mean!
1. Big "D" is going to be here is 13 days!
2. A month and a half till the holiday of eating... which means I will be home in 47 days!
3. Sorority events start kicking into gear... aka... something is going on everyday for the rest of the year... overwhelming... yes! But so so fun!
Ahhh... the anticipation for it all is killingggggg me!
4. Pumpkin Season... and no not the carving pumpkin season (I really hate carving pumpkins actually). I am talking about the pumpkin season of eating of course! Tis the season of pumpkin pie, pumpkin latte, pumpkin bread.... alll soo yummy! But lets me honest... I don't really eat pumpkin pie (except on Thanksgiving ofcourse), I don't do lattes', and pumpkin bread is one of those things that once I start I can't stop, so I just don't start. So what does pumpkin season really mean to me? Pumpkin smoothies, pumpkin yogurt, pumpkin protein pancakes, pumpkin black bean burgers.... the healthy list of pumpkin can go and on and on... so this month will be devoted to pumpkin. Recipes to come :)
My October 1st attempt/success:
Flourless Pumpkin Pancakes
- 3 carrots shredded
- 1 egg white
- pumpkin pie spice
- cinnamon
- touch of vanilla extract
- 1/4 serving vanilla protein
Blend ingredients. Spoon into balls and flatten on a baking sheet. Cook 20 minutes at 350.
Sounds weird I know. But one. it makes the kitchen smell heavenly. And two, it is like fall in your mouth. Delicious.
I have a picture of the final product but I feel like I cannot share it with you because although I will vouch and say they taste delicious, I will admit the looks of them aren't so "delicious".
It is nice to finally have the fall weather creep in. Slowly SoCal is turning into boot season. I will give it a few more weeks to officially get there! Boots are my favorite, so I am getting very anxious! It is crazy how fast time flies. It feels like I just started school, that I just started college, that I still have years of school ahead of me.... when in reality... I am almost halfway through the Fall semester, I graduate in little more than half a year, and the real world is right next to me! Sometimes I forget that I am turning 22 this year. Danggg... I am getting old. But I can't say a word of complaints! I love my life, I love my friends, I love my sorority, I love my family, I love my school, I love it all! Life is good!
