An overcast Saturday I get to spend inside doing homework alllllll day? I think so.
Life is crazy as usual. But I am loving it! I mean I could go without the tests and projects due... but then where would I get that "freaking out" adrenaline rush? Life just wouldn't be the same. So thank you to all my professor that stress me out, give me acne, and allow me to spend a beautiful Fall Saturday inside typing and reading away. You complete my life. I would be lost without you!
Last weekend was the weekend to go out. New sorority sisters, new semester... everyone and their dog were out, so I joined in on the fun.
So this weekend was the weekend to relax (besides the homework pile over my head).
Last night = game/baking night at our apartment. My favorite! I may be 21... I may be in college... and I may be a sorority girl... but I LOVE nights in with friends!
And here is my reasoning:
I like quality relationships. I have always been the one that would rather have a few close friends then many many "friends". So when you are at a party... and everyone is drunk stumbling around you... and you are yelling to eachother to even try and possibly hear eachother... what kind of friendship is that building? Not quite the relationship I desire to have.
But don't get me wrong, I love getting ready and going out! But if a weekend doesn't include it.. I am totally fine with that too!
This week I have continued my stuffed pepper themed; however, Thursday night consisted of homemade black bean burgers! Any yumyumyum they were delicious!
I have made pumpkin black bean burgers before... but I just wasn't feeling the pumpkin, so I "winged" a new recipe. (Basically the pumpkin black bean burger recipe minus the pumpkin with the addition of egg white)
- 1/4 cup black beans
- a little less then 1/4 cup oatmeal
- onions
- 1/2 cup chopped green pepper
- 2 egg whites
- garlic seasoning
- cayenne pepper
Step one: Saute the onions, add in black beans and seasonings and cook for about 5 minutes. Let cool.
Step two: In a separate bowl, mix oatmeal, egg, and green onions together. Add in the onion and black bean.
Step three: In the warmed pan from the stove, make little patties and cook on each side for about 3-5 minutes each.
Step four: Move the patties onto a baking sheet (use pam!), and bake at 350 degrees for about 15 minutes.
You have yourself a black bean patty! Enjoy!
On the side: Mustard and a sliced tomato. And steamed broccoli.
Dinner = delicious.

... WEEK COMPLETE....
But what made this week MORE COMPLETE!
I booked a flight home for.....
THANKSGIVING!!!!
and CHRISTMAS!!!!!
Can you say excited!?!?!?!
And to add to my excitement...
No need for words. Pure bliss.
The child in me that will never go away.
(But I have to admit... I have not tried them yet... but when I do.. I will let you know the verdict)
