Chocolate. The solution to Everything!

Labor Day Monday almost over already!?!!

After spending all day yesterday doing homework... no joke... from 11am to 8pm... I spent online, in the textbooks, and putting together presentations... helloooooo to the SCHOOL YEAR, today was fairly relaxing with an all day recruitment workshop with my sisters.

Joining a sorority has been one of the best decisions I have made in my college career no doubt. I found some of my bestest friends and made some of my memorable memories. No doubt... one of the best things in my life is Theta.


What sorority also includes is food. Lots and lots of food! So this is a good thing right? I mean we are all "broke" college students trying to survive...? In some aspects, it is a fabulous thing. Lunches, snacks, dinners... it is always nice to be fed. But I do have to say that what we supply as food for sorority isn't all that fabulous. Costco sandwiches and cookies, bags and bags of chips, diet sodas, pizza (lots of pizza... I understand... it is easy).... and the list goes on and on...
So today, I put in my two sense and requested a healthier option for snacks. So along with chips and the usual, they provided carrots, grapes, and trail mix. Guess what was gone first?!!!!
Not the chips.
Not the cookies.
Not the candy.

See people do enjoy healthy food! We just need to make it more available! WooHoo! I was a proud sister :)

Week one of school is complete, but I still feel like I am figuring out my routine and how I am going to organize myself for the year. Hopefully by the end of the week and after recruitment is over, I feel more at ease with my schedule and how my weeks will look.

I have been making a lot of smoothies lately as they are good to grab on the go.
And delicious ones at that.
Chocolate Banana Smoothie

Ingredients:
Vanilla Carbmaster Yogurt
Half a frozen banana
2 T Dark Cocoa Powder
5-6 Ice cubes
Blend!

Can you say stuft peppers?! Because I sure can! I have had stuft peppers for the last week. Literally. And because I want to... they are THAT good! I have been changing up what I stuff them with, but each time it is a little bit of goodness.
Tonight however, I am out of bell peppers :(
But... I have a plan of course! I am making grilled chicken with a sweet potato and cucumber and tomato salad. YumYum! Is is dinnertime yet?

Now that my time is more limited my recipe experiments are definitely going to be slowing down. But my goal is to try something new each week. So this week was black beans. I made them from scratch! And from scratch I mean I bought them dried and cooked them into black beans. It began with soaking them for about 6 hours and then boiling them for an hour. They came out a little crunchier then the canned black beans we are all use to. BUT I do have to say... I think I may have liked them better! So I would say... it was experiment success :)
