Simple Doesn't mean "Easy"

First week out at a client. DONE!
and it flewwwwwww by! Although I do have to say... sitting in a office for 8 hours straight starring at a computer screen is going to take sometime to get used to... but other then the back ache and minor headache... all is GOOD!

I spent the last week out in Huntington Beach working on an aerospace client! And the best part.....
I AM DOING REAL WORK!!!
In fact... the only time they sent me to do "intern" work... aka make copies... I jammed the copy machine...
Simple Doesn't mean "Easy"... :)
Bring on the HARD stuff!


So far my worries of having time to work out and eat right haven't even been an issue!
Everyday... wake up at 5am (not to shabby!)... get a solid workout in and am at the office by 8:30am. Perfect!

Lunch is in our "budget" that the client agrees to. Aka... we go out to lunch everyday for free :)
My first thought... OMGEZZZYYY... I hate eating out! But so far all is good!

Tuesday: Whole Foods -- I made my own salad from the salad bar! This is probably my favorite place to eat! HANDS DOWN!!!!

Wednesday: Islands. I got a skinny greek salad with chicken. According to the menu, it was 350 calories... not to shabby... plus I had it dry with not dressing. Lunch #2 success!

Thursday: Chipotle... a few months ago I would have DIED to say I ate Chipotle... but listen to this: I got a veggie burrito bowl with black beans, lettuce, tomato salsa and hot salsa... Chipotle calorie calculator sayss...... drum rollllllll pleaseeeeeee.... 300 calories. SCORE!

Friday: A met a Partner for a lunch meeting at Taleo Grill (a very yummy Mexican restaurant). I had a salad with cucumber and blueberries and salmon (yum!) dry as well. And I would be lying if I said I didn't sneak in a few chips with guacamole :)

I wish I had pictures to show you all my meals... but I think if I pulled a camera or my iphone out to snap a picture, my team (who don't know me well enough yet) may think I am a little odd. 

The only KILLER thing about this week was: SNACKS!!!
Keep in mind I am working with two men. After lunch on Wednesday, we decided we needed snacks for our audit room. I let the men pick out the snacks... so we came back with wheat thins, fiber one bars, gum, water, almonds, and dark chocolate kisses. Not to bad right? However, when they are all over the table in front of you as you work... you tend to keep eating them... and keep eating them... and keep eating them....

I can see how office people gain weight! Holy Cow!
So after a day of learning this... as I came home with a slight tummy ache... the next day I brought my own snack. Yes, yes I did bring a lunch box to work.... how else was my yogurt going to stay cold?! :)

Oh and how could I forget Fourth of July update! My roomies and I went to Sarah's bf's block party for the day. It brought back prime childhood memories of the 4th. Nothing beats, bbq, fireworks, pool, and volleyball with friends and families!



I enjoyed my weekend off. It was a "get everything done that you didn't do during the week" kind of weekend, with some time by the pool of course!

Recipe of the week:
Tofu Scramble:
- 1/3 firm tofu block cut into small pieces
- handful of spinach
- 3T spaghetti sauce
- onion powder
- garlic powder
- 2T nutritional yeast


In pan heat spinach and tofu on medium heat.
Mix together remaining ingredients in separate bowl.
Once spinach is wilted, add in sauce and stir around until mixed well and warm.
Enjoy!
