Britt Thought: No such thing as LUCK

Interterm is done. D.O.N.E.
Celebrate!? I think yes! A month full of Accounting Information Systems (I know... hold your excitement.. I will too) is finally over. I can say I successfully (still waiting on the final grade :/.. so I guess I should say fingers crossed successfully) made it through that dreaded course!

So what is in store for me now?!
Just 25 credits this Spring semester and then you know... just GRADUATION in May!
Are you kidding meeeee???!!!! Has four years gone by!

And then what do I do?
Oh you know.... travel back to the beautiful state of Colorado and work and study some more for the CPA. Now that sounds like a fun summer right?!?!
And then what happens?
I go on vacation with my Mom and Grandma to some tropical warm place where I can sit in the sun and drink my fuffy drink and relax! Now you are jealous?
And then where will I be?
On my way back to California.... to move into a new apartement and get settled while I begin studying for the second half of the CPA.

Which brings us to September, which means....
I will be starting at Ernst and Young... Hello big world!

Long story short... 2012 has so much ahead for me and I am so excited to experience it all! Seeing all that is ahead of me really makes me realize where I am at, how far I have come, and how much potential and growth is out there.
Someone the other day told me that I was lucky for the position I am in as I start my last college semester. At the time, I was like, "I know... right? I am happy that it worked out this way."... and for some reason their comment stuck with me and so did my response. So while I was walking to the gym the other day, I just keep thinking about it... and this is what came to my mind...
Lucky...? I am not lucky.. I worked my butt off to get where.
And happy that it worked out this way...? I am not happy it WORKED OUT this way... I am HAPPY that I worked my butt off to get it this way.
So this got me thinking about the word lucky... is there such a thing? And I came to my conclusion that there is no such thing as luck. There just isn't. There can't be. Everything you do in life is a decision. Everything you accomplish and everything you mess up... you somehow someway control. People say luck, becuase they don't have the motivation or dedication to do the same. You are lucky for having this. You are lucky for doing that. Anyone can do anything if they put their mind and heart into it. And if that is true, then everyone is given the same '"luck". And if everyone is given the same "luck"... Luck loses its meaning.

My tangent. Just one of those things that pops into my head and gets me thinking. A britt thought for the day!

As my new semester begins so does my new workout routine.. what do I have in store?!
Monday: Body lift and 40 minutes cardio mix, Sauna
Tuesday: 50 cardio mix, 20 minutes bootcamp work, 15 minutes yoga
Wednesday: Body lift, 45 cardio, Sauna
Thursday: Spin class, 20 minutes bootcamp work, 15 minutes yoga
Friday: Long mile (5-10) run, 15 minutes abs,
Saturday: 45 minutes cardio, 24Lift
Sunday: Spin, Yoga class
With only classes on Tuesday and Thursday, I plan on walking to the gym M -W- F- S-S... :) Despite all the people who think I am crazy.. I love my walks in the morning and it is seriously the best cool down to walk after.

I just bought another 2 years at 24hour... guess they are stuck me with! :)

So ofcourse with all this working out... I need to fuel this body of mine... right? So what has been cooking, baking, and rolling in my kitchen?!?!

Drum rolllllllll pleaseeeeeee......

Pizza... CarrotCake Protein Bars... and Healthified Sushi....

You can't live in America and not eat Pizza.. come on... but I did for the last year and a half... and I can say.. I miss it! But what I don't miss is the grease, the fat, the lack of fuel it provides me... and the gross food coma I have afterwards. So cost > desire... so I pass it up and it goes on the nono food list.
Until I came across PowerCakes Pizza PowerCake... and my life will forever me changed!
Pizza... Welcome back into my life!
Despite the look of it... It taste like pizza I promise!
Pizza PowerCake
3 eggwhites
1 T Flax meal
1 T oat flour
1 T protein powder
1 T pumpkin
1 T nutrtional yeast
1 tsp baking powder
1 tsp balsamic vinegar
1/3 cup liquid (water)
1/8 cup chopped onion
1/2 cup kale, spinach, brocolli.. whatever you have around is what I use.
seasoning to your taste (I use basil, garlic, and pepper)
1. Mix all your ingredients
2. Put "dough" into crust shape
3. Bake at 425 for 25 minutes
4. Let cool, add toppings... and bake until toppings are warm and melted...


I made it the other night, and realized that I didn't have tomato sauce (major pizza ingredient!) so I decided to make my own pesto sauce to top the pizza which included:
1/4 acocado
1/2 cup roasted brocolli
2 T balsamic vinegar
basil
Blended it in the magic bullet and it makes a healthy verison of "pesto".
So I topped my pizza with that and then sprinkled some nutritional yeast as if it was the cheese and added tomatoe slices to act like pepporini.

I will forever be okay with never eating greasy, yucky pizza. Horray! Thanks PowerCakes!

And then I did some experiment baking.
I will be heading to they gym Tues and Thursday around 5am. So those days I will not have the time to make my fruit and yogurt to take with me to eat on my way like I do when I walk. Plus, I make a smoothie after my workout to take to class with me that has fruit in it. So fruit won't do the trick. I need something quick and easy that will give me a little sugar and protein to get the workout kickin'.
And we all know that I am not a fan of processed foods. And basically everything that is convient is processed. But through my experiement I found success and now will be making carrot cake (or different flavor) protein bars that I can wrap up individually and have ready for me to eat on my way!

Carrot Cake Protien Bar
1/2 cup oat flour
1/4 cup protein powder
1 tsp cinnamon
1/4 tsp baking soda
sprinkle of all spice and nutmeg
2 eggwhites
7 packets sweetner
4 oz baby food carrots
2 oz water

1. Preheat overn 350.
2. Mix dry. Mix wet. Combine.
3. Bake 20-30 minutes.
This made me 4 "bars" which I individually wrapped and stuck in the fridge so they would stay good until I needed to eat one. At about 100 calories a bar... I would have to say they are the perfect thing!


And then my Asian side came out... and I was all about rolling sushi!
Every since I have moved out to California, sushi is the thing to do. I use to hate it. I know can stand it. And I am starting to crave it. Oh gosh!
But with my healthy mindset, I can see the perks of eating sushi, but the downside too.
Hello, white rice! Some places offer brown if you are lucky. But wait luck isn't real, so rather some places offer brown rice if you pick the right place to go. But for the most part they tell you "No brown rice (insert asian accent)"..
And anythign is better homemade anyway... so I found a reciepe of The Detoxinista for sushi roll with jicama rice!
 What you will need:
To make the jicama rice alll you do is...
1. peel the jicama
2. chop the jicama up (and eat some pieces... it is so tasty!)
3. Pulse the jicama in a blender
4. Transfer to a towel and ring out all the water (You will be VERY surprised with how much water drips out!)
It should resemble rice after...
Then slice up your veggies and fish (I went with a veggie roll)

Roll it up on a seaweed paper... and cut into slices...

Not to shabby for my first time!


So many more things I want to try... and ofcourse will keep you posted on what is and isn't working... more so the "is" part!
