TrueLife: Accounting has taken over my life.

I wish I could say it isn't true... but I would be lying.
Accounting owns me. It owns my life.
Five hours spent on homework Thursday... Five and a half hours spent on homework Friday...
and I am only a little over a third of the way done.

There is light at the end of this tunnel... right?!?

Luckily... its a 4 day weekend! No class Monday! Thank you Martin Luther King Jr! So I have the time to get it done... as for today.... I am making it a no homework, no accounting kind of day! With dinner and a night out in Newport :)

This past week food adventures?

I tried Kabocha squash and Delicata squash for the first time! And they both were delicious!
Kabocha Squash Pudding Pie
- Half a Kabocha squash baked at 400 degrees for 30-40 minutes
- 1/3 block of silken tofu
- cinnamon
- stevia
Put all ingredients into your blender and blend until a pudding type mixture is created. (Add liquid to get the blending going). Then put mixture into a sprayed cooking pan and sprinkle more cinnamon on top, and cook at 350 degrees for 30 minutes. The pie is done when the top is slightly brown.

Stuffed Delicata Squash Mexican Style
- half a Delicata Squash baked at 400 degrees for 30 minutes
- onion
- pasilla pepper
- black bean
- garlic
- hot sauce
While the squash is baking, in a pan warm up the mixture of the onions, pasilla peppers, and black beans. Add garlic to taste. Once the squash is done.. take it out and stuff it :) Easy as that!

You are probably wondering what I did with the other half?! Oh.. made the same thing the next night! Haha... one squash = two meals. Can't beat that!

Now off to my day full of NOT school!

It is almost TIM TEBOW TIME!!! Go Broncos! LETS DO THIS!!!
