Summer... are you teasing me?

I went from the freezing cold Colorado weather to this... almost 90 degree California "dream"...
Summer?!?! are you here???!!

I only have class Monday, Tuesday, and Thursday's... with quite a lot of homework to do in between... however, with this schedule and the weather outside... I feel as if I skipped Spring semester and Summer has already begun...

Reality check. It hasn't. It is January... Cali just is THAT great! :)

Besides being in class and finishing up homework, I haven't really been up to much. Just doing some needed cleaning and organizing. It is the beginning of the year... those things are just a must! I went through my closet and made a huge "goodwill" pile that I will donate, I dusted, wiped down, vacuumed, washed... you know all that fun stuff?!!

And ofcourse I have been cooking? I do love having the time to make my meals. It makes eating just that more exciting!

So what has been cooking?!?! Squash ofcourse. How did you guess!

A few nights ago I made a Mexican Acorn Squash. Delish!
I warmed up the onions, black beans and tomatoes with a sprinkle of cayenne pepper, garlic powder, and red pepper while the half of a acorn squash baked at 400 degrees for 40 minutes.

Once the squash was done, I took it out of the oven put it in a bowl and filled the insides with this mixture. And no mexican dish is complete without....
HOT SAUCE! Yum!

For my birthday, my roommate got me a juicer! Never had one of these before. But since my birthday fell during finals week last month, I was way too busy and stressed to try it out. So finally, my juicer virginity was taken!
photo.JPGI made fresh orange juice! It was to die for! I am not a juice fan usually because the amount of added ingredients in juice makes all the nutritional benefits of juice go away in my mind. Of course that juice is going to taste good with added sugar... duhhh?!?!!
So this juicer was the best idea! I can make FRESH juice with no added ingredients! Perfect!
I cannot wait to try different combinations. For now, all I have is orange juice down! I will update you as I become more juice pro!

Off to another day doing.... homework... and who knows what else!? Guess it will be a surprise to you and me! Happy Saturday!
