A Night in Newport. A Pumpkin Roll PowerCake. Success.

I hate when the weekend is coming to an end... especially when it is a four day weekend. You get into the feeling of having nothing to go to that day... and reality is... class is tomorrow. But all is good.. half way through my interterm class which means half way to go! Get 'errrr done!

Saturday Night was spent at a sisters house in Newport! So fun! We went down early to get dinner and hang out before we went out to the bars for the night. Sushi anyone?!

I can say I have finally been "Californiaized" into the sushi status. I love it! And this place was so cute and yummy and very reasonable priced! I would definitely recommend it!

This morning I slept in... till 8:30... I feel like the more I allow myself to sleep in the longer I sleep in for. I am not sure I totally like it. I like getting my day started and going early so I have more time to do everything I need and want to do... But then again, I have to keep reminding myself that once "real life" work starts, I will never be complaining about sleeping in again so I should just be thankful for this right now :)

When I got home from the gym, I was super excited because I had planned to try this Pumpkin Roll PowerCake I found on PowerCakes blog. (If you are interested in clean, healthy, simple eating I HIGHLY recommend her blog!)

PUMPKIN ROLL POWERCAKE

Dry Ingredients:
- A little less then 1/4 cup oat flour
(To make oat flour: Take 1/4 cup rolled oats and blend in magic bullet)
- 1 TB protein powder
- 1 TB Flax Seed Meal
- 1 tsp baking soda
- 1 tsp baking powder
- 2 Stevia packets
- Cinnamon
- Pumpkin Pie Spice
Wet Ingredients:
- A little more then 1/4 cup pumpkin
- 3 egg whites
- Splash of Vanilla Extract

Mix all dry ingredients together and then add the wet!
Preheat oven at 350 degrees.
Pour batter onto sprayed parchment paper in a form similar to this:

Bake for 9-11 minutes. Just check it after about 9 minutes. You can tell by looking at it if it is done or not. It will be a darker brown color. I cooked mine for 10 minutes and I think it was too long; however, PowerCakes cooks hers for 13 minutes. My advice: Just keep an eye on it.

While it is baking, take a towel and sprinkle Cinnamon on top of it. Once the PowerCake is done baking, immediately flip it onto the towel and roll it up.

Place the rolled up PowerCake into the fridge for about 15 minutes, allowing it to cool.

Take it out of the fridge. Unroll the PowerCake and fill the PowerCake with vanilla yogurt. Roll the PowerCake back up. And cut it into slices.
