Let's be honest. There are some perks and some well "not so perks" of cooking for one.
So lets start out with the good... shall we?
1. You can make what YOU feel like WHEN you feel like.
2. It is cheaper...? This is debatable.
3. If you make it and it tastes horrible, only you suffer :)
So now lets move onto the "no so perks" of cooking for one:
1. A recipe is always made for 6-8 servings! And well... I am one. One serving.
2. And cooking for one usually means eating with one. Aka. you eat alone. Boo.
So now the question is... how to deal with the "not so perks" of cooking for one?
Here is how I deal:
1. I eat the same thing... all week long... hence my dinner from last night ---> Look familiar?
So I made pumpkin black bean burgers... again! And they were just as delicious as the first time I made them... perhaps even more since this was the second time around. I served them this time with sliced tomatoes and a bowl of steamed kale and broccoli.
2. I may cook for one, but I live with two! Thank goodness for roommates! They do eat by the way... they just tend to eat their meals out... or cook on their own... our schedules are way to different to do "family" dinners... or rather they most likely wouldn't touch half the things I make :)
This morning consisted of my usual Monday work out.
Pre-Work out meal: Half a carbmaster with an sliced apple.
Post Work out meal: Pumpkin Smoothie -- the other half of my carbmaster yogurt, 3 Tablespoons pumpkin, 1 shredded carrot, 1/4 scoop of vanilla protein powder and ice.
My roommate got into a minor car accident this weekend and her car is in the shop. So today I was "taxi Brittany"... what are best friends for?!
In between driving her to her appts and work, we made a stop at a lovely Greek restaurant for lunch.
Neither of us had eaten here before so we thought why not try it out.
For starters, we had pita and hummus ofcourse! Warm pita and fresh hummus.... OMGezzzy! It was delightful!
We both had the Super Greek Salad which was romaine lettuce, onions, olives, feta cheese, and shrimp with a vinaigrette dressing (I opted out on this.). It wasn't anything to brag about but it was light and fresh and hit the spot!
And ofcourse, dessert came into the picture. We split this... I don't even know what it was called... Greek pastry thing that has honey and nuts. Pretty much... it melts in your mouth! So good!
It was GREAT to finally spend time with her! She has been home, which is LA, most of the summer, and is usually with her boyfriend when she is in town, so a nice quiet catch up lunch was MUCH needed!
My day then consisted of some shopping! Necessary shopping? Oh no... definitely unnecessary shopping :)
But I came back with some Steve Madden Nude pumps I have been eyeing, so I would say I did well!
T - minus 6 days until the first last day of school!... is this real life?
T- minus 1 day until the Freshies move in... so exciting!
T- minus 4 days until I give the Freshmen my "college experience" speech... slightly nervous?

I love Byblos!!! And was it Baklava that you had for dessert?? If it was, that stuff is amazing and a big cavity all in one :)
