S.U.C.C.E.S.S.

Last night was a S.U.C.C.E.S.S!

Pumpkin Black Bean Burgers!

- 1/4 cup black beans
- a little less then 1/4 cup onions
- 1/4 cup oats
- 1/4 cup pumpkin
- 1/2 cup chopped green pepper
- garlic pepper

Step One: Heat up onions and black beans in skillet. Cook about 5 minutes. Let cool.
Step Two: In separate bowl, add all other ingredients. Once onions and black beans are cool add to mixture and well.... mix :)
Step Three: Create patties. I made three patties from this recipe. Two rather bigger ones and one little fellow.
Step Four: Put back into hot skillet and cook 3-5 minutes on each side.
Step Five: Place on cookie sheet and bake in oven at 350 for 15 minutes.

And you have yourself a delicious burger!

I enjoyed these burgers with a dip of mustard and a side of a cucumber and tomato salad. Proud Cook!

A few hours later my head and tummy were thinking that some ice cream was needed to make this day complete. I needed to celebrate my first black bean burger right? So I decided I would run out and grab a ice cream cone from McDonalds.
side note: I don't know if it just the childhood memory of getting ice cream cones with my Dad after basketball practice that makes these cones the best tasting vanilla ice cream, but I do have to say nothing beats a McDonalds simple vanilla ice cream cone... and all the goodness coming in at 150 calories, 4g fat, and 16g of sugar... I think I can handle this!

Buttt I have sad news... I got to the drive up window and the voice behind the screen told me that the ice cream machine was out of order. Come onnnnnn.... really?!?! I never go get ice cream and the one time I do it is out of order. So I decided that it just wasn't meant to be... so I headed home. But detoured to Yogurtland on the way of course! :)

I enjoyed a lovely bowl of Carmel Almond Bar frozen yogurt topped with a few dark chocolate crumbles and toffee bits. WOW! No complaints here! Wish I had a picture to share with you all... guess that means I will have to make this creation again soon, just for you ofcourse!

Today was the usual Saturday morning.
Woke up and walked to the gym in the brisk morning air. Aweee... nothing will ever beat walking in the morning.
Did about 45 minutes of cardio and attended the "kick butt" sculpt class (still my favorite class at 24!)

Came home to make my Kale Broccoli and Eggwhite scramble! Addicted. Enough said.
And what do you know? I went back and steamed more Kale and broccoli for round 2!

A nothing to do relaxing Saturday is ahead of me. Right now... I am just sitting by the pool, blogging, and enjoying the cooler day thinking what I should try today for dinner? Hmm..... the options are endless :)


Does anyone use wordpress? I am considering changing to that blog server? Thoughts?!
