I can officially call myself a Ernst and Young assurance staff! Offer is signed... and my career begins September 2012! Can you say excited? stoked? jumping with joy? huge smile on my face?!?
Let me senior year of college begin!!!
The past couple weeks have been a little crazy.... with an amazing experience in Orlando... to my closing week of my internship and receiving my full-time offer!

Words cannot even express the Orlando Conference! I wish everyone got to experience the week I had the opportunity to experience! Just being in a room with 2000 interns from all over the WORLD was amazing! Lets just say EY knows how to put a conference together :) I was very impressed! I want to go back!
Can I be an intern forever?!?! Is that allowed?!?!
After some of the best eight weeks of my life, my intern came to an end! My roommates surprised me with my room completely decorated and my parents treated us to a dinner to celebrate from Colorado!
I think I found my new favorite restaurant... HANDS DOWN!
It is called Shabu Shabu! How it works:
You cook your own food! You pick what meat you would like... they offer a variety... I choose shrimp and salmon :) And it comes with a HUGE plate of veggies and brown rice as well!
There is a bowl of boiling water that you cook everything in and they have several sauces to choose from. I want to say it is similar to The Melting Pot but with water! This is my kind of place!
Afterwards, they take what is left in your bowl of water and make a soup for you. Lets just say it was delicious! The atmosphere of the restaurant is very laid back and friendly! It was a FABULOUS night!
I would recommend this to everyone! Especially for a first date! Just saying... :)
Food and Fitness:
The lunches... the dinners... they have all come a stop as the internship is over. No more eating out for me. Although I have really enjoyed trying new places, I am excited to get back to my recipes and cooking for myself!
I have a list of recipes I want to try this coming few weeks so stay posted as I will one. have SO much more time to blog :0... and two. will have more time to cook and share with you all what I discover!
I was talking with someone the other day about fitness and nutrition, and was asked some staple tricks I had that have worked. I don't want to refer to them as tricks, because honestly I feel that there is no such thing as tricks to being healthy. It is lifestyle, and in order to see results, it is about making the change not just "tricking" yourself.
Some advice from me to you :)
1. Lift Heavy! You won't bulk up. As women, we don't have the make up to build bulky muscle unless you take supplements (which I don't recommend). I always get comments from men at the gym, surprised that I lift as much as I do. But if you saw me on the streets, I can guarantee no one would assume that I had the muscle I do. Pick up that ten pound dumbbells and drop the three pounders! They aren't doing you any good! Not only will heavier weights increase your lean muscle but it will also boost your fat burning! Who doesn't like that?!!
2. Cross Train! Running is good. Cycling is good. Stretching is good. Swimming is good. It is all good for you, I agree. However, what is BETTER is a combination of it all. Our bodies are amazing in that we can adapt to things quickly. So if you run everyday... that is good, but your body is adapting to it. Changing what you do each day causes your body to continuing changing. Not only that, your work outs don't become boring and I like to believe time goes by faster when you change things up. Give it a try!
3. 80% nutrition, 20% fitness: My favorite quote, "I can eat whatever, I worked out today!" So many people fall into this trap. Yes working out burns calories and you need to replenish your body, but nutrition is a HUGE part of healthy. And this isn't in the form of calories either. It is more important to track what nutrients are going into your body. I use to count my calories religiously... I mean to a T. No joke. But as that got extremely tedious and annoying, I also realized that it was more important to track the protein, fiber, vitamins, sugar... etc... that I was feeding my body. Take some time and look at what your calories are consisting of and even more so when you are getting those calories. Are you getting enough protein to support your muscles? Are you getting enough vitamins? Fiber? Are you eating the right thing after a work out? Before you go to bed? Just some thoughts...
4. My last tip: EAT! Eat every three hours! Keep that metabolism going! And avoid the feeling of hungry. If you are never hungry... you don't have the opportunity to over eat. I eat about six times a day. With three slightly larger meals and then three more of snacky meals. Each morning I figure out what I will eat that day so I don't just graze all day. Ofcourse I would lie if I said I don't sneak a few bits of something here and there as well. :)
