So my morning began with driving down the 55 South at 6am to John Wayne Airport to drop of my roommate.
And after dropping my roommate off, my morning continued down the 55 S into Newport Beach.
By 7am, after a quick stop for black coffee at Starbucks, this is where I was.
A gorgeous morning walk by the water in Newport!
I walked from lifegaurd post 65 to Balboa Pier... so about 4 miles. Then ran from Balboa Pier to Newport Pier... only about 2 miles...then walked the rest of the way back to lifeguard post 65....and then finished off the morning with some Yoga on the beach.
Perfect morning... I think yes!
And perfect mid morning/afternoonish... I think yes again!
All was good, until about noon and my tummy was growwwllllinggggg! So as the beach started to fill up, I was leaving. The good news: I for sure made someones day as I drove away at noon from the beach leaving behind a PRIME parking spot from the early morning start I had. Your welcome :)
Ofcourse, no beach day is complete without froyo. And what do you know... Yogurtland is on the way home! So with no doubt I stopped by on the way!
Carmel Almond Bar FroYo with a sprinkle of toffee bites on top.
$1.22 at 33 cents an ounce... about 4 ounces... I would say I have mastered the right portion
size of froyo... hmmm... I don't know if that is a good thing:
Either 1. It is.
or 2. It means I go WAY to often...
or 3. The two together is a good thing.
Ahhh whatever! Who knows?!?
On my way home, I also pass a Mother's Market which is the only place I have found that sells unsweetened shredded coconut. So I made a quick stop there to pick some up. A little treat for my smoothies!
As I was headed up to the cashier to pay, I walked by some silken tofu that was on sale. I had been reading recipes that called for this so I thought what the heck... lets give it a try! Coconut and silken tofu... what a buy!
When I got home... my tummy was still growllllinggg.. Froyo was good but not going to cut it! So I made a quick salmon salad, with a chicken of the sea pink salmon packet, celery, onion, tomato and mustard with a dash of cajun pepper. Hit the spot....
But weird, I was still hungry. So I decided to try my new silken tofu!
And let me just say... try it! It may just change your smoothie world!
Pumpkin Pie Smoothie (notice all the pumpkin lately...still trying to finish my pumpkin puree before it goes bad...)
In the blender went...
1/4 block of silken firm tofu
1/4 cup pumpkin puree
dash of cinnamon
few drops vanilla extract
1/4 scoop of vanilla protein powder
1/4 cup unsweetened almond milk
sweetener to taste
several ice cubes
It was delicious! The tofu adds more of a creamery aspect to the smoothie along with some protein. Overall this smoothies added up to about 100 calories. Not to bad for a summer refreshment! Pumpkin gives you fiber, tofu and protein powder gives you a decent amount of protein.... so 100 calories of good for you things is even better!
Watch out Jamba Juice...you may be going out of business! Okay maybe not... but this is THAT good!
