Boats and Floats!

Good Morning Thursday!

What is better then a good wake up at 5am to cycle?
probably so many other things.... but nonetheless... I got up at 5am this morning to cycle.

Why? You ask. Purely because I wanted to.

And I was hoping to get a yoga class in afterwards, but unfortunately the classX group room was under construction so no class today! Boo :(

I am cravinggggg Yoga!

My mind has been going a hundred miles an hour as I start to get ready for the next semester.
School on Monday?! Say what?

But even more so, I have a speech this afternoon to give to the incoming business freshmen.
I got the confirmation email the other day... and
one. It is in our auditorium... aka. the place is HUGE.
two. They are expecting about 300 students to attend. (This will be the biggest crowd I have ever talked to)
and three. I have become more comfortable with public speaking, but holy cow am I nervous!

The good news... they are freshmen... I wrote my speech... and this is about my experience... how can you mess up your own experience story right?!

On a lighter note:

I have found the new love of my foodie life... SILKEN TOFU!
And with that I have made HOMEMADE ice cream! Who needs another fro yo, Baskin Robbins, Cold Stone... NOT ME!

How do you make this deliciousness:
Easy!
Ingredients:
1/4 block of silken tofu lite
1/2 vanilla carbmaster yogurt
1/4 cup unsweetened vanilla almond milk
handful of ice cubes
dash of vanilla
and sweetener to your tasting...
BLEND!

If you want to get more creative... add cinnamon, or half a banana, or cocoa, or coconut...make it into a float... the list is endless!
But the base for this yummy creamy bowl of "ice cream" comes in at about 75 calories! So add away... you have calories to give!

My other discovery of the week (so far)...

Zucchini Boats!

So when I began making these I wasn't sure if I was going to like them... so instead of making both my zucchini into boats, I just did one to test it out and not potentially ruin my whole meal. But when all was said and done, I totally wish I would have made both into BOATS!

- 2 zucchini sliced in half, guts removed.
- roma tomato
- diced onion
- garlic
- chili powder
- 1 laughing cow cheese wedge
- Parmesan cheese

1. Slice the zucchini and with a spoon remove the "guts" and put the "guts" into a bowl.
2. Add tomato, onion, garlic, and chili powder into the bowl and mix.
3. Spread the cheese evenly inside each zucchini.
4. Take the "guts" mixture and fill the boats up
5. Top with some Parmesan cheese
6. Bake at 400 for about 30 minutes.
