and then it was errand time... WootWoot! I may be one of the few people who enjoy running errands.
I am weird... I know :)
So what did I eat today you ask?!? Well today is the What I Ate Wednesday (so far)!
Pre - WorkOut:
Half a carbmaster carrot cake yogurt with a chopped Pink Lady Apple and a sprinkle of cinnamon.
Post - WorkOut:
Half a carbmaster carrot cake yogurt with shredded carrots and a sprinkle of cinnamon. (a NEW favorite)
And ofcourse my protein packed Vanilla Frapp. Couldn't have a morning without that?!?!
A couple hours later I made myself my usual eggwhite scramble with a NEW twist... KALE!
My errands took a little longer then I had planned so I by the time I got home I was starving.
The good news: one errand did include Smart and Final... which meant POPCORN! I haven't been buying popcorn lately because well... I went through 4 lbs of it... YES 4 POUNDS!... in a matter of something around a week and a half! My popcorn addiction was getting OUT OF CONTROL! So now, I think of it as treating myself. When a Smart and Final trip is needed... aka.I am out of nutritional yeast... I treat myself to popcorn kernels. They sell it in a bulk bin, so I have more control over the amount a get. I like to say I am a recovering Popcornaholic!
So back to WIAW... this was obviously the first thing that was eaten when I got home with a starving stomach!

Dinner menu:
- grilled zucchini
- grilled cabbage and carrots
- either grilled chicken or salmon (haven't decided?)
Delicious!
And I would totally be lieing if I said I wasn't going to have another bowl of popcorn before the night is over... or two! :) hehe!
Zucchini Chips, Roasted Cabbage, and Chicken
(just realized this sounds very similar to the dinner I am planning tonight... hmmmm) I made this dinner a few nights ago... and was very pleased... so I thought I would share!
- 2 Mexican squash
- 1/2 small cabbage
- two small chicken breast
- 2 eggwhites
- nutritional yeast
- seasonings to taste
STEP ONE: Slice the zucchini into slivers about a half an inch thick. Cut the cabbage into slivers as well keeping it together as one piece as best as possible.
STEP TWO: Dip the zucchini and cabbage into the eggwhite and place on parchment paper.
STEP THREE: Sprinkle zucchini and cabbage with nutritional yeast and seasonings. Optional: Top the zucchini with Parmesan cheese!
STEP FOUR: Bake at 400 for about 30 minutes or until golden brown. ( I think mine could have used more time. They weren't crispy enough.)
