Carrot Cake for One!

B.E.A.UTIFUL day to say the least!
90 degrees outside. No clouds. Sunshine. It was an absolutely gorgeous day!
And after class and tutoring... this is where I could be found...
Jealous!?
After another crazy week of school and work, nothing could beat my afternoon! It was perfect!

I finally convinced myself after about two hours that I should probably go inside and be productive. :)  Laundry was waiting for me... my fridge was telling me it was time to be filled again (aka I NEEDED groceries)... and my earphones recently broke so it was necessary for some new ones pronto!

Chores. Chores. Some dindin. And more chores.... and then I decided I wanted to try a new recipe.
So a few days ago, I ventured and tried a cookie recipe that failed me. In the end, I felt like I was just eating whole wheat flour. So I was eager to try again.. this time with additional ingredients that could hopefully spice up my whole wheat flour.. On Chocolate Covered Katie Blog... I found this recipe and thought what the heck... I will give it a try!

Carrot Cake for ONE! and I recommend it!
- 2 tablespoons Whole Wheat Flour
- 1 tablespoon unsweetened applesauce
- 1 tablespoon water
- sweetener to taste
- 1ish tablespoons shredded carrot
- optional: vanilla extract, cinnamon (I need to invest in some of these "cooking" things, but as of now don't have them so I don't include them in my cooking, but if you have them and do... I bet it will be even better!)

Bake at 325 for 15 minutes... and you have yourself a little carrot cake muffin/cookie...

It is no high calorie carrot cake with cream cheese frosting most of us are use to, but the carrots give it a sweet sense and it hits the spot if you are craving something sweet :)
