4.0 (cross your fingers) and.... I am BACK!

Did you miss me?!
Well I have good news....
I am done with my junior year... SUMMER is finally here... and I don't really have much to do until my internship starts in late June... all this adds up to..... dundundun.... blogging TIME! Woohoo!

So what has happened this last few weeks... let me beginning with...
Finals... Finals... Finals... Finals... did I mention Finals?!
It consumed me! I made an hour by hour schedule for my week to make sure I allocated enough time to each... Sounds nerdy huh?! Well I would more then happy to admit that I am a nerd! But does my potential 4.0 this semester mean anything!? Heck yes!

Of course, I couldn't concentrate just on school the whole week and half that has gone by right? So what else have I been up to you ask? The usual... gym... sorority meetings... and finding new food creations, which I am so excited to share with you!

First of all, I follow another health and fitness blog that introduced me to PEANUT FLOUR...
1. I love peanuts
2. I love peanut butter.
3. I love anything with peanut flavor
... I JUST LOVE PEANUTS!!! So I was very interested in this peanut flour ingredient. I looked at our local market to see if they carried it... No luck. I searched online to see if I could buy it online... No Luck (unless I wanted a jumbo multi pound bag of it)... But then... My grandma told me that her friend had found it at Trader Joes! Most people are in LOVE with Trader Joes... but not so much me so I don't go there often... but once I heard of this great news... I went right away :)
And look at what I found...
You could totally say this may have been the highlight of my week!
So you are probably wondering what the heck do you do with peanut flour?!
Some things I have tried and enjoyed so far:

- Peanut "Bar" - Combine same amount of peanut flour as water with a dash of sweetener. (1tbs PF, 1tbs water) It should mix into a dough. Create little balls and place on aluminum foil... Squash the balls down and sprinkle with cinnamon. Let sit in freezer overnight. ENJOY!

- Peanut Popcorn - Air popped popcorn (I am pro at this we all know). Mix peanut flour with water until it is slightly watery. Drizzle onto popcorn. Put popcorn in the freezer for about 10 to 15 minutes, or until the peanut flour is hard. ENJOY!

Peanut Flour is defatted peanuts. It is low in fat and carb... but very high in Protein. Using it is similar to protein powder. I will keep you updated as I start to try new creations with it!

What else have I 'created' this week?!

Roasted Veggie Salad:
Spinach, Carrots, Broccoli, Zucchini, Tomato with mustard dressing

Tofu Sandwich:
Whole Wheat Bagel Thin, Tofu, Spinach, Tomato, Mustard

Spaghetti Squash Bake:
Half a spaghetti squash, broccoli, cottage cheese
Baked at 375 for 20 minutes.


SIDE NOTE: My pictures may be deceiving... but I promise you, they all were so YUMMY!

With summer here, and a lot of time on my hands until my internship begins... what do I have planned?!?
A WHOLE LOT OF NOTHING!!!!
But of course its me... so I have a list of several things I want to make sure I do:
- Morning Beach Walks/Runs twice a week
- Try a new recipe a week/ Learn how to grill
- Find cute "business woman" work clothes ;)
- Scrapbook. Scrapbook. Scrapbook. (I am like 4 years behind)
and....
- Read a book (haha JUST KIDDING) - Mom that was for you :) 

This is the first time I have been living in Southern California without school. This is the first time since I was 15 that I haven't had work. This is the first time I have had nothing to do. Help?! Anyone?! Because I know in about 24 hours... maybe 48 at most, I am going to want to be busy again :)
But until then... LET THE BEGINNING OF MY SUMMER BEGIN!!!!!
