Yesterday.
This is where I could be found.
Long story... short. I can't complain about a thing!
I spent the afternoon outside by the pool with a cool breeze blowing over me. It was wonderful! A little piece of heaven if I do say :)
Dinner rolled around and I made myself a tofu salad which included spinach leaves, tomato, roasted carrots and onions with the rest of the tofu I had made the night before topped with mustard as my 'dressing'... D.e.lious!
And then it was dessert time OfCourse! And what sounds better then a "makeover" peanut butter chocolate cookie!
- 3Tablespoons peanut flour
- 2 Tablespoons unsweetened vanilla almond milk
- 1/4 tablespoon coconut oil
- a splash of vanilla extract
- a pinch of baking powder
- a packet of sweetener
- as many chocolate chips as you want! :)
I preheated the oven at 330 degrees and once it gave me the "beep" it was ready... in went my cookie for 15 minutes...
The result! Another piece of heaven! (I know... Heaven twice in one day... God is GOOD!)
After this indulgence... I sat my butt on the couch and didn't really move again until 11pm (aka bed time). I watched the finale of The Biggest Loser... and it made me so inspired! Some of the people were losing ME off their bodies!
I guess the truth to life really is just setting your mind to it. If you want it, you can have it. Just don't stop. And realize that it isn't going to come easy... quick... or perhaps the exact way you planned it. But if you never try, you will never know, right?
So today...
I sleep in till 8am! Woohoo slowly getting better with this whole sleeping in thing.
Went to the gym and got a nice sweaty work out in:
- 45 minutes weight machines
- 15 minutes 7.5mph treadmill
- 15 minutes stairmaster (my best friend... no but really!)
- 15 minutes elliptical
- 10 minutes in the sauna (I think people may stare at me while I am in there because I sweat so much.. but dang! it feels good... and I know deep down they are jealous haha!)
After a nice walk back, I showered and got ready to head out to run some errands.
Stop one: doctors office
Stop two: Computer doctors office
I decided that I need to find a man that knows how to fix cars, understands computers, can build things, paint, fix appliances, and clean well... and I will be set! So if you know a man that is about 6'4" or taller, preferably dark hair and skin, and has all these characteristics feel free to let him know you have a women for him :)
I came home for lunch... and my afternoon was something like this:
A big salad with iced tea by the pool. Summer 2011... you have yet to let me down!
Now it is off to clean the apartment, finish running other errands, and start figuring out my internship details.
The first week of my internship is up in LA so I received an email with the itinerary of the week yesterday! I am getting anxious and so excited to start! June 22... Business Britt will be ready to rock and roll!
