California... I love you!
California... I hate you!
But I will admit, I think the love overtakes the hate...
I headed off to the gym this morning around 7:30am to take a Pilate's class followed by the usual cardio session and then a Yoga class (which I only lasted for 30 minutes because the lady was too "introductory" it wasn't worth it anymore, and Newport was calling my name!)
So around 11... I made my way into Newport... and picture itself says it all. It was a GORGEOUS day!
Since I came straight from the gym, I packed myself a snack and lunch...
Snack: Carrots with Roasted Red Pepper HummusLunch: Spinach salad with tomato and carrots with a drizzle of mustard and 2 tbls nutritional yeast
Snack #2: Orange
... what can I say... I was there for a while and I packed accordingly :)
Around 2:30, after deciding my skin probably hates me... I decided to call it a day and headed back to Orange. However, I didn't get back to Orange until 3:30... Thank you California Traffic! Stop. Go. Stop. Go. AHHHHH!!!!!
Needless to say, I enjoyed my day. It made me appreciate where I live and all that God has blessed us with! The man is good! I think we should keep him around :)
Last night, I splurged and got a small piece of salmon to bake at the store. It just sounded so good I couldn't pass it up! So I baked salmon with balsamic vinegar, along side some kale chips and roasted broccoli.
It was my first time making Kale Chips... but I recommend it! They are delicious!
- 1/2 bunch of Kale broken of the stem torn into smaller pieces
- sprinkle Parmesan cheese on top with some garlic powder
Cook at 350 for about 15 minutes or until crispy. (Next time I am going to cook mine a little longer I think.. my small pieces were crunchy... but the larger ones could of used a few more minutes)
and.... enjoy!
Off I go to see what's for dinner tonight?!
