Sleeping in?!?! What does that even mean?!
I decided yesterday that I wasn't going to set my alarm and I was going to enjoy a morning of "sleeping in". But what do you know? 7am came and I was wide awake and ready to start my day. So I have come to the conclusion... I am simply a morning person. I like to wake up and get my day started. Why sleep in..? You are wasting away precious 'life' time!
So that brought me to today... I decided to keep my regular schedule and keep going to cycle at 5:30am. Why not right?!?! I have the whole day to relax, and I can EVEN take a NAP! So it was rise and shine at 5am today with a solid cycle workout followed by some abs... and some yoga. Ahhh... it feels so good!
Lets recap my first day of Summer, May 23.
I woke up to the sound of NO alarm... 7am.
I walked to the gym... and did my usual work out.. 45 min muscle training, 40 min cardio circuit, 10 min sauna.
I showered, got ready for the day, and went over to a friends where I spent the rest of my day....
Yup... exciting I know!
For dinner I decided I was going to try a new recipeish thing I found on another health blog... Baked Tofu.
My grandma introduced me to tofu a few weeks ago when she was out here visiting. I have always been interested in it... but the 'block' always intimated me. What the heck are you suppose to do with that thing? Firm, Soft, Extra Firm... what does that even mean?!
So my Grandma enlightened me on tofu.. and despite all those who despise it... it really is pretty good!
I have also had an obsession with nutritional yeast lately. I never knew it even existed until a sorority sister of mine recommended it to me. Since then I have been trying numerous things with it. It has a slight cheesy salty flavor so adds a nice subtle flavor.

So back to my baked tofu...
I bought an Extra Firm block of tofu... I still am unsure what the firm, extra firm, and soft is... I am sure I could research it, but Grandma said go with the extra firm so that is what I shall do :)
I then cut it into slices... about half an inch thick... and covered them with nutritional yeast.
I baked them at 400 for about 25 minutes. (flip them over half way through)
So now what you ask?! Well you can use the tofu for many things...
1. I like it plain with a little hot sauce
2. You can make a sandwich
3. You can add it to your salad....
Last night, I decided to make a wrap with it. I used a 100% whole wheat tortilla, with spicy mustard, a tomato and spinach leaves... added in my baked tofu... wrapped it up and YUM! I had myself a delicious dinner with carrots and hummus on the side.
(I would have a picture... but I was so dang hungry it was gone right before my eyes)
Well on to another day. It is finally suppose to start getting nice out so hopefully I will be able to enjoy the sun by the pool!
