The Sun makes me Smile :)

From the looks of that... I would have to say I have nothing to complain about :)

This weekend was relaxing. Yes you heard me correctly... I had a RELAXING weekend during the semester. I think this may have been the first one since.... I couldn't even tell you. And it was great! I almost didn't know what to do with myself.

Friday... I went to the gym in the morning... Pilates.. Cardio... Yoga...
Then spent my afternoon tutoring... relaxed for the evening... and headed to Newport for the night!
We tried a new bar, "Woody's " and I was loving it! It was ridiculously packed.. but dancing and free drinks I think yesss!
Saturday... I was up around 7 and headed to the gym once again as usual. Cardio for an hour and then 24lift with Melanie (aka women who will kick your butt!) It was nice to get back in the swing of my Cali routine after being in Vegas and then home for awhile.  I spent the rest of the day lounging around, recovering from my lovely four hours of sleep. And dare I go out two nights in a row... I don't think so! So I spent the night watching a movie with my roomie and of course eating my favorite... airpopped popcorn! Yum!
And that brings me to today!

Went to the gym again this morning... Cycle and Yoga fulfilled my morning. When I got home, I headed right to the pool! 80 degrees, slight breeze... this is why I LOVE California! How is the 40 degree weather my Colorado friends and family?!?!

I have a new addiction ( I really should say I have an additional addiction... because my popcorn addiction is still going strong). In fact, I will have to admit and say I went through the whole jar this week! I would like to thank my Grandma for this one :)
Some ways to enjoy:
1. Just eat them! They have a lovely kick to them, that just gets your mouth burning... It is delicious!
2. I put them in my scramble in the morning:
- two servings frozen spinach
- three eggwhites
- spoonful of jalapeno peppers with additional juice
First heat up the spinach in a pan on medium heat. Mix together eggwhites and jalapenos, add in spinach once it is all warm. Whist together, so that the eggwhites get a little bit "puffy". Pour back into pan and let sit on medium heat for about three minutes. Then begin to stir, and you have yourself a scramble! And a delicious one at that!
3. Cottage Cheese - Take a serving of cottage cheese in a small bowl and add in a spoonful of peppers with a little of the juice... mix together and ENJOY!
4. Salad. They are a great addition to a salad. (This is what my Grandma introduced me to, which led to my other findings...)

If you like hot and spicy... want to get that metabolism going... and aren't afraid of trying new things... I HIGHLY recommend Jalapeno peppers! Thanks Gma!

My other creation for the week: Protein Brownie!
- < 1/4 cup Oatmeal
- < 1/4 scoop Vanilla Protein Powder
- < 1 tbls Coco Powder
- enough water to make a batter texture
Mix ingredients together in a mug... and put in microwave for 30 seconds... and Waaalaaa.... BROWNIE!

As this lovely day comes to an end... let the week begin! Two more weeks till finals... One week of finals... and then SUMMER!
