Cinnamon Sweet Potato "Fries"

After a long rough day at the pool yesterday, I came inside to make a little snack to hold me until dinner.
On PeanutButter fingers, she had posted a recipe for cinnamon sweet potato fries a while back, and boy oh boy did they look delicious!
So here it went:
I cut up a small sweet potato into "french fries"... and soaked them in cold water for about 20 minutes, while the oven was preheating to 450 degrees.
(Supposedly you do this to make them crispier when they bake... hmmm.... not sure I believe it but nonetheless it was worth a try)

I then lined a cookie sheet with parchment paper (my grandma gave me some before I left for school for the semester and it has been the best thing ever... clean up? what does that even mean?)
And sprinkled some cinnamon on top!
Another option is to put olive oil on them first and then sprinkle cinnamon but I am not a huge roasted with oil fan. I am sure if you did though they would come out more of a french fry then how mine turned out.

In the oven they went for 15 minutes at first... I flipped them over... and they baked for 10 more minutes...
....the smell of them baking might just be the best part :)

Afternoon snack... complete!

The rest of my day consisted of unnecessary errands with a trip to Sprouts to pick up some fresh fruit and veggies.
My basket:
- apples
- oranges
- broccoli
- and KALE ( a new addition to my groceries)

I also ventured into Target and found a sweater... and then into Old Navy where two pairs of shoes just happened to catch my attention and leave with me... and to Ross where I found a new pan for the kitchen! Yipeee!

Dinner was simple: Frozen stir fry veggies with chicken and hot sauce.
Dessert: Peanut  Banana Smoothie
In the blender went:
3/4 frozen banana
2 Tbls peanut flour
1 Tbls honey
3/4 cup Almond Milk
It was bomb! enough said.

Now it is 7:30am Thursday morning.. I have already cycled... enjoyed a nice breakfast of a protein egg brownie... and am ready to get the day started after yoga class at 9.
