Mix. Blend. Cookie Dough.
As I wondered my usual health blogs one morning, I stumbled upon CCK's recipe on Chocolate Chip Cookie Dough and my heart skipped a beat.
I loveeeeee cookie dough! I loveeeee chocolate. I loveeeeee the combination of the two!
I love it so much that I use to buy the prepackaged cookie dough in the powder form, put some in a mug, added a little bit of water to it to make it "dough" like, and microwaved it for about 30 seconds... ohhh the good ole' days when I had no idea the crap I was feeding my body! Typical college creation right?
But back to the reality of not buying cookie powder, I decided to try this recipe out and see if my cookie dough cravings could be satisfied.
So in the blender went:
- 1 can of garbanzo beans
- 1/8 tsp salt
- 1/8 tsp baking soda
- 2 tsp vanilla extract
- 1/4 cup nut butter (I opted out of this and used 2 tbls unsweetened applesauce and 2 tbls peanut flour instead)
- 1/4 cup almond milk
- Sweetener ( the recipe called for 1/3 cup brown sugar... but I didn't have brown sugar so I just used a packet of truvia.. but I bet the brown sugar would make it that much better!)
*Optional: chocolate chips, cinnamon, nuts....
** I added 1/3 cup quick oats to the blend as well to add in some texture but it wouldn't be necessary.
This morning I woke up and did my usual routine of walking to the gym, cardio for 45 minutes, and 24lift for an hour... followed by 10 minutes in the sauna. It was a rather "painful" workout, considering my shoulders are very burnt from yesterdays sun... therefore, as I ran, walked, stood, or sat... my sportsbra was rubbing my burnt shoulders raw. And as I lifted for squats and lunges with the weight bar on my shoulders, I thought my skin was going to ScReAm! But if the worst of my worries are sun burnt shoulders... I think I can manage!
Post-Workout Breakfast consisted of:
- half of one of the energy bars my Grandma sent me
- Kale and Eggs
I usually make Spinach and Eggs... but since I had a little bit of Kale left from the other dinner I thought I would try something new. I let the kale cook for about 8 minutes of medium heat, while I whisked two eggwhite in a bowl. I then poured the egg white on top of the kale and sprinkled on some nutritional yeast and ground pepper. Put the lid on the pan and let it cook for about 5 minutes. It was rather tasty!
Summer is going well so far! I mean really, pool, sun, eating, shopping, walking... is there anything to really complain about?!
I do miss being in Colorado a little, and spending the summer at home with my brothers! Can't wait to see you all soon!
